Here are some of our favorite recipes using Texas Fixins products.  How do you

Chili Mixin’s Meat Loaf
1 Tbsp. olive oil
1 medium onion, chopped
2 tsp. chopped garlic
1 tsp. Italian seasoning
3/4 tsp. salt
1/4 tsp. black pepper
1 egg
1/2 c. Chili Mixin’s, divided (straight out of jar)
1 Tbsp. Worcestershire sauce
2 Tbsp. parsley
1 1/2 lbs. lean ground beef
3/4 cup quick-cooking rolled oats

Topping:  Mix ¼ cup Chili Mixin’s and ¼ cup ketchup together to place on top
of loaf before baking.

In a large skillet, heat oil.  Add onion, garlic, seasonings, salt and pepper.  
Cook, stirring for 3 minutes or until onions are soft.  Let cool.  In a large bowl
beat egg and stir in onion mixture, ¼ cup Chili Mixin’s, Worcestershire sauce
and parsley.  Add beef and oats.  Mix gently until evenly combined.  Press
mixture into a 9 by 5 loaf pan.  Cover with topping.  Bake at 350 degrees for 1
hour.  Let stand for 5 minutes.  Drain pan juices.  Cut into thick slices.  Serves
6.   Great sliced cold and used for sandwiches.  www.texasfixins.com
Texas Fixins Two-Step Cole Slaw

First Step...Dressing

1/2 c. Miracle Whip or Mayo
2 Tbsp. Pickle-Peños liquid (or more to taste)

Mix the above ingredients in a small bowl.

Second Step

Open an 8 oz. bag of shredded cabbage, put it in a bowl and then add the
dressing and mix well. Very fast and very good!

Texas Fixins BarBQue Sauce

This isn’t an ordinary barbecue sauce!  The sweet heat comes from our
secret ingredient…Pickle-Peños!  You can brush it on chicken, ribs or steaks
during the last five minutes of grilling, but this Sauce is so versatile.   Simmer
meatballs in BarBQue Sauce for a tasty appetizer.  Or use BarBQue Sauce
as a steak sauce.  BarBQue Sauce is a great dipping sauce for shrimp.  
Another favorite is to shred beef, pork or chicken, pour in BarBQue Sauce
and simmer for an out-of-this-world sandwich filling.

Chili Mixin’s Easy Chicken Enchiladas

This recipe is very easy and quite delicious!  Great way to use up leftover chicken.

3-4 cooked chicken breasts (grilled is great!)
Approx. ½ cup light sour cream
Shredded cheddar cheese
1 jar Texas Fixins Chili Mixin’s
½ jar water
Tortillas (I used flour tortillas)
Optional:  diced onion, cilantro

Shred the cooked chicken.  Combine Chili Mixin’s and water.  Pour about ½ cup
into the shredded chicken.  Add the sour cream to the shredded chicken until it is
spreadable.  Use this filling for the enchiladas.   Spread a few tablespoons of
chicken filling down the center of a tortilla.  Sprinkle with cheddar cheese and roll
up.  Place in baking dish.  Repeat until baking dish is full or you run out of chicken
filling.  Carefully pour the rest of the Chili Mixin’s over the top of the enchiladas
coating each one with sauce.  Sprinkle the whole thing with shredded cheddar.  
Sprinkle with diced onions and cilantro if you like.  Bake at 350˚ for 25 minutes.

Texas Fixins Pickle-Peños Ham Salad

3 cups minced cooked ham
1 cup mayonnaise or salad dressing
3/4 cup chopped Pickle-Peños

In a food processor chop ham to a fine consistency. Mix ham with salad dressing
and Pickle-Peños in a bowl. This makes a good snack on crackers or on bread for
a sandwich. Very easy and good. The Pickle-Peños add all the spice, no salt or
pepper needed. Keep refrigerated. Makes 3 cups.   www.texasfixins.com
Texas Fixins Chili Mixin’s Salsa Chili

1 to 2 lbs. chili meat (beef, venison, turkey, game)
1 jar Texas Fixins Primo Salsa
1 jar Texas Fixins Chili Mixin’s
½ jar water

Brown chili meat and drain. Add a jar of Texas Fixins Chili Mixin’s and a jar of
Primo Salsa.  Add half of a jar of water (add more water for desired consistency).  
Add beans if desired.  Simmer for 15 minutes.

You can serve the chili over rice or pasta.  Also good topped with shredded
cheese.  This chili tastes great on hot dogs, and it makes a delicious Frito

Texas Fixins Chili Mixin’s Seafood Pizza

1 prepared 12" pizza crust (or make your own)
1/2 c. Chili Mixin’s (straight from the jar)
1 6-oz. can crab meat (well drained)
1 8-oz. package frozen salad shrimp, thawed and drained        
1/2 jar (7.5oz.) quartered marinated artichoke hearts
3 Tbsp. chopped pimento
1 4-oz. can mushrooms (drained)
1 c. Mozzarella cheese (more if you like)
1/4 tsp. dried basil

Place the crust in a 12" pan and spread the 1/2 cup of Texas Fixins Chili Mixin’s on
top. Next evenly distribute the crab meat, shrimp, artichoke hearts, pimento,
mushrooms, and cheese. Sprinkle the basil on top. Bake in a 450-degree oven for 15-
20 minutes. Serves four or two hungry people!  Chopped black olives and onions
could also be used for toppings. This pizza could be cut into small squares and

Texas Fixins Pickle-Peños Pinto Beans

30 oz. can of pinto beans
4 Tbs. minced Pickle-Peños
1 12-oz. can of beer
1 onion, chopped
2 garlic cloves, minced
1 tsp. chili powder
1 tsp. salt

Put all ingredients in a pan and bring to a boil. Turn down heat and simmer for 20
minutes. Serve.   www.texasfixins.com
Chili Mixin’s Layered Enchiladas

3 cups chopped cooked chicken breast (about 4 boneless, skinless)
1 (15 oz.)can black beans, rinsed and drained
1 can (14 oz.) diced tomatoes and green chilies
1 tsp. garlic powder
1 tsp. cumin
1/2 tsp. pepper
2 10 oz. cans cream of mushroom soup
1/2 cup Texas Fixins Chili Mixin’s mixed into 1/2 cup water
Vegetable cooking spray
9 (6 inch corn tortillas)
1 cup shredded Mozzarella cheese
2 cups shredded Monterey Jack cheese

Toppings: shredded lettuce, sour cream, Texas Fixins Primo Salsa

Cook first six ingredients in a saucepan over medium heat about 10 minutes. Stir
together the two cans of mushroom soup, Texas Fixins Chili Mixin’s, and the water in
a saucepan, stir with a wire whisk until blended together and heated thoroughly.  
Spoon 1/3 of sauce into a 12X9 inch baking dish coated with cooking spray: top with
3 tortillas. Spoon half of chicken mixture and 1/3 of sauce over tortillas: sprinkle with
the Mozzarella cheese. Top with 3 tortillas: repeat layers once with remaining
chicken, sauce, cheese, tortillas and ending with Monterey Jack cheese on top.
Bake at 350 degrees for 45 minutes or until cheese is lightly browned on top. Serve
